 If you're like me, you default to eating the same basic things over and over again. We all have our "go-to's" our favorites, our convenience foods and whatever is quick to make. And how many times have you gone the same restaurant, look over the whole menu and end up ordering the same meal you usually get? You're not alone.

No matter what type of diet you eat. Most of us eat the same basic things over and over again. This can be true for plant based eaters to. In order to ensure a wide range of vitamins, minerals and nutrition, plant diversity is vital.

Oil-Free Plant-Based Rainbow Salad Recipe

Ingredients:

  • 1 cup cooked quinoa
  • 1 cup chopped kale
  • 1 cup sliced red cabbage
  • 1 cup diced bell peppers (assorted colors)
  • 1 cup shredded carrots
  • 1 cup cherry tomatoes, halved
  • 1/2 cup chopped cucumber
  • 1/4 cup chopped fresh parsley
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions:

  1. In a large mixing bowl, combine the cooked quinoa, chopped kale, sliced red cabbage, diced bell peppers, shredded carrots, cherry tomatoes, chopped cucumber, and fresh parsley.

  2. Squeeze the juice of one lemon over the salad ingredients. This will act as a flavorful and refreshing dressing without the need for oil.

  3. Season the salad with salt and pepper to taste and toss everything together until well combined.

  4. Let the salad sit for about 10-15 minutes to allow the flavors to meld together.
